These 3 Muffin Tin Meals Are Not Only Cute — They’re Delicious!

The Domestic Geek is back at it again with three magnificent recipes.

Here’s how to make her delicious Cheesy Lasagna Bites. Grab a frying pan, and heat up some olive oil. Throw in two cloves of minced garlic. Once the garlic becomes fragrant, add spinach. Cook for maybe two to three minutes until wilted, then add a jar of tomato sauce. Flavor with Italian seasoning, red chili flakes, salt and black pepper. Simmer for five minutes until all of the flavors combine perfectly.

While the sauce cools, in a medium bowl, add ricotta cheese, shredded mozzarella and parmesan. Mix together well with pepper. Prepare the muffin tins by spraying a fair amount with cooking spray. This recipe uses wanton wrappers instead of lasagna noodles because it holds better. (Don’t be afraid to try it). Layer each cup with two wanton wrappers, add scoops of the cheese filling, and tomato sauce. Top with another wanton wrapper, some more cheese filing, and tomato sauce; top with mozzarella and parmesan cheeses, sprinkle with dried parsley, and bake at 350 degrees for 20 minutes.

Next is Chicken Tacos – Spray muffin tin with cooking spray and layer with two wanton wrappers in each cup. In a large bowl throw in leftover rice, beans, cooked chicken chopped finely, and salsa. Season with chili powder, garlic powder, and cumin. Add hot sauce (optional). Mix well and place scoops into each muffin tin. Add salsa and shredded cheddar on top. Place in oven, 350 degrees for 15 – 20 minutes. After which you can add sour cream and chopped chives for a perfect finish.

Lastly, Mini Meatloaves – In a large bowl, add extra lean ground beef (ground chicken or ground turkey), finely chopped red onions, celery, and red pepper (use a processor for that). Add some steak seasoning, Worcestershire sauce, an egg, and breadcrumbs (substitute gluten with oats or quinoa flakes). Add bbq sauce and mix well (hand mixing works best). Make mini meatballs and place in each muffin cup. Bake at 400 degrees for 30 minutes. Take out of oven, brush with bbq sauce and place back into oven for five minutes. For perfection, add whipped mashed potatoes and chopped chives.
