Funnel Cake Ice Cream Sandwich Recipe Will Make All of Your Wildest Dreams Come True!

This ice cream sandwich is carnival food gone wild! Who doesn’t like ice cream? Who goes to a carnival and doesn’t eat a funnel cake? Not me! And to my surprise, now I can indulge in both!

The secret is apparently to lighten up the ice cream so you don’t bite into a warm funnel cake and have a big hard ice cream filling in the middle. To do this, you leave the ice cream out for just a little while to start, then transfer it to a big bowl. In the meantime, whip heavy cream to soft peaks. When that is ready, you add some lovely strawberry preserves with real fruit in it to the ice cream and fold in the whipped cream, being careful to get everything together without deflating all the air you worked so hard to whip into that cream.

Place this into a small cookie sheet, flattened out and leave to freeze overnight.

To mix the funnel cake batter, put it through the funnel into some hot oil and make little cakes, about three inches in diameter. They only need to cook a total of 2 or 2 1/2 minutes until they are completely golden brown.

Now you are ready to assemble the sandwiches!

Take the ice cream mixture out of the freezer and using a three inch cookie cutter, cut out rounds of the beautiful light mixture. Then place one of these rounds on a warm funnel cake, top with another funnel cake and sprinkle the whole thing with powdered sugar. All that is left to do is eat! YUM!
