If you are like me and love Mexican cuisine, check out this tasty spin on one of Mexico’s favorite street foods. Foodies like me can eat a quesadilla every day of the week because of its many variations and taste combinations.
What makes this recipe delightful is the unique ingredients he uses. To make this amazing version, you will need tortillas. As we can see, these are small tortillas that can be found just about anywhere. This delightful chef is also using Oaxaca cheese. For those of you who may not be familiar, Oaxaca cheese is a semi-hard cheese from Mexico which is similar to mozzarella because it is unaged and stringy.
The video host is also using carnitas, also known as deep fried pork belly. (Very delicious I might add.) The final ingredient is finely sliced jalapeños. Now who’s ready to start cookin’?
He takes two tortillas and puts finely chopped Oaxaca cheese on both. He explains earlier in the video that this type of cheese melts quickly and is perfect for this recipe. On one tortilla, he places the carnitas over the cheese, and on the other he places the jalapeño slices. Now it is up to you how spicy you are willing to go.
He then takes the quesadillas downstairs into his kitchen and puts them into a pan on a medium flame until the cheese is melted. He then folds them over. Just scrumptious! He suggests serving the quesadillas with a salsa of your choice.
After seeing him bite into this carnitas quesadilla, I’m dying to try it!
