1 Minute Microwave Mug Breakfasts

Professional chef and bold baker Gemma Stafford amazes us with the most appetizing breakfast recipes made in a mug. Thats right, in a mug!

The first recipe is a light and fluffy blueberry muffin. Get your microwavable mug, add milk and flavorless oil (vegetable oil), mix well together. Add flour, sugar, baking powder, baking soda, and gently mix together until well combined. Add blueberries (frozen or fresh). Don’t mix around too much. In a separate bowl make a strudel. Add butter, flour, sugar, and vanilla extract. Combine with fork until mixture resembles bread crumbs; scatter strudel mixture in the cup. For a 1200 watts microwave, place mug in for one minute. If the result is too tough, it was microwaved too long, so keep an eye on your delight. You can top with a little icing sugar for perfection.

The next delight is a cinnamon roll, which is more of a cake than a dough but the combination of flavors makes it taste just like cinnamon roll. In a mug, add oil, milk, applesauce and mix well together. Add flour, sugar, cinnamon, baking powder, salt, and gently mix ingredients together. This recipe can be baked in an oven for 350 degrees for 10 minutes. Place in microwave for one minute. Remember to keep a close eye on the cake. For the complete cinnamon roll look, decorate with cream cheese frosting and a sprinkle of cinnamon powder.

The last recipe is French toast in a mug. In a microwavable mug add an egg, milk, vanilla extract, maple syrup (or honey, or sugar), and mix well together. Add sliced cubed bread, (leftover croissants are ideal), mix well together. Add any ingredients or flavors to your liking. However, Gemma is adding chocolate chips. Mix together well. At this point, the mixture can be prepared the night before and placed in the microwave in the morning. Microwave for one minute. For perfection, top with whipped cream, and chips of chocolate.
