If you are like me, then you’ve enjoyed a wonderful memory with the timeless taste of cherry coke. When we saw this recipe from Cincy Shopper of Cherry Coke Cupcakes, ecstatic could not fully describe the feeling that I felt! This recipe takes everything you love about the taste and transforms it into a yummy dessert. 

Gather 1 box of Devil’s Food Cake Mix plus the ingredients to make it, 1 cup Coke, 1/3 cup Maraschino cherry liquid, and 24 maraschino cherries.

For the frosting, gather 1 1/4 cup softened butter, 5 cups powdered sugar, 2 tablespoon coke, 1 tablespoon of maraschino cherry liquid, red food coloring, and 24 maraschino cherries.

The directions are simple. Preheat the oven to 350°F, and line a muffin tin with cupcake liners. Mix the batter according to the box directions, except, instead of adding the water, add 1 cup Coke and 1/3 cup cherry liquid. Fill liners to the 2/3 mark and add 1 cherry to the middle of each. Bake according to box directions and allow cupcakes to cool completely.

Next, whip the butter, coke, cherry liquid and gradually add powdered sugar. You can opt to add red food coloring to get that red color, if you so desire. Transfer frosting to a piping bag and frost each cupcake.

Finally, top each with another cherry. Delish!
