All you need to make this delicious dessert is cornflakes, malt powder, caster sugar (superfine sugar) salt, melted and unsalted butter. You are going to also need cookie dough- yum! The ingredients for the cookie dough are unsalted butter, soft light brown sugar, 2 large eggs, a half teaspoon of vanilla extract, plain flour, more salt, baking powder, baking soda, and chocolate chips.
Pre-heat your oven to 325 degrees. Add your cornflakes to a big bowl and beat with a wooden spoon. Add malt powder for delicious flavor. Also add caster sugar, salt, and melted butter. Stir together and ensure the butter is evenly distributed.
On a baking tray lined with baking paper, pour the cornflakes mixture evenly. Put the tray into the oven for 10 minutes until cornflakes is crispy and crunchy.
Now for the dough! In a large bowl, add butter and the soft light brown sugar. Beat together until fluffy. Don’t forget to get everything, so scrape off the sides of the bowl and continue mixing. Lower the speed of your mixture, add one egg and beat well. Repeat the process with the second egg. Next, add the vanilla extract. You can now sift into the bowl your flour, baking powder, baking soda, and salt. Return to your mixer and mix until all of the ingredients are well combined.
Crumble up the cornflakes and add to the dough mixture. Finally, add the chocolate and mix well together. Make out dough balls and add unto a baking tray. Ensure each ball is spaced out; they tend to spread when baking.
Bake for 12 to 15 minutes. Take baked cookies from the oven and let cool. For a little twist, you can dip half of the cookie in melted chocolate and sprinkle with cornflakes.
