For many families, summer outings include grilling out with friends and family! And that grilling usually includes a variety of meat and vegetable recipes—including pork spare ribs. So, when I am challenged for time, I resort to tried and true recipes that tell the world that countless hours were spent over a hot grill—when in reality, they weren’t.
What is one of my favorite recipes? This delicious crock-pot cola barbecue spare ribs ranks pretty close to the top of that list. This recipe is one of my favorite go-to’s because no matter how hectic my schedule is, I can prepare them the day before and go from grill to plate in under 30 minutes.
The recipe is prepared in two parts and can travel well if need be. With this recipe, the crock-pot becomes my new best friend by completing 90 percent of the ‘heavy lifting’ while I am at work.
For this crock-pot barbecue cola spare rib recipe you’ll need:
6 lbs. pork spareribs
2 tsp. dry mustard
4 tsp. pickling spice
1 tsp. salt
1 1/4 cup brown sugar (firmly packed)
½ cup cola (regular, not diet)
1/2 cup ketchup
Water (sufficient to cover meat in the crock pot)
Start by cutting your ribs into sections and placing them in the crock-pot. Then, pour in the water, and sprinkle on the salt and pickling spice. Cover and cook on low heat for four to six hours.
When the ribs are done place them in a pan and cover with a dry rub of brown sugar and mustard before storing in the refrigerator overnight.Then, mix together the ketchup and cola and ladle the sauce over the ribs.
Once they’re covered in the ketchup/cola sauce go ahead and grill them up! I guarantee these ribs will be finger lickin’ good!
