One of the more popular sweeteners today is maple syrup. It is a 100% natural sweetener that is claimed to be more nutritious and healthier than sugar. There are many claims about maple syrup everywhere, but let’s separate the facts from the fiction.

According to health.com, maple syrup is made from the sugary circulating fluid (sap) of maple trees. It can boost your immune system, age-proof your skin, and calm tummy troubles. What would pancakes be without the succulent goodness of maple syrup? The nectar of the dessert gods makes it an ingredient you should have on deck at all times.

If you have ever wondered how to make your own, here goes. First find a maple tree and drill a hole the same width as the tap you are using at an upward angle. It should be about three inches deep preferably. Insert the tap, and run the hose to your receptacle, or a 6-gallon jug.

Once you are happy with your sap, it’s time to do a whole lot of boiling. It is recommended that you do the boiling outdoors, utilize something like a turkey fryer burner and a stainless steel steam table pan on top to create an evaporator.

Once it’s a liquid is a light bourbon color and the bubbles last longer, you can bring it inside to finish the boiling.

Allow it to get to 219.5°F and ensure the bubbles start climbing up the pot. When that happens, then you know it’s time to take it off the heat. Strain the debris using a linen or terrycloth towel over a heat-safe bowl.
