Five Minute Ice Cream Cake

Summer dessert is my favorite kind of dessert. Whether it’s chasing down the ice cream truck for a popsicle or standing in line for a soft serve ice cream cone, frozen treats are at the top of my list!

Ice cream cake, while delicious, is often more expensive than actual cake, and an even bigger pain to make.

However, Ruth over at Living Well Spending Less has created an ice cream cake that looks incredible and only takes FIVE minutes to make. This is totally something I could handle!

With just three simple ingredients, this dessert truly couldn’t be easier. All you need are 10 ice cream sandwiches, 1-2 flavors of your favorite ice cream, slightly softened, and 12 finely crushed Oreo cookies (or whatever topping you prefer)!

Directions:

Use tin foil to line a 9 x 5 inch pan. Lay five of your ice cream sandwiches across the bottom of the pan so they fit snuggly.

Spread a 1-1 1/2 inch think layer of your softened ice cream on top of your sandwich layer.

Lay your other five sandwiches on top and add one more layer of ice cream. On top of your ice cream layer sprinkle your crushed Oreos or other topping of choice.

Cover your cake with tin foil and pop it in the freezer for at least two hours, but preferably overnight.
