These little treats are so cute and delicious, you will have a hard time stopping yourself from eating several of them with coffee, after meals, and as a midnight snack, so be sure to share with family members and friends to stop yourself from gaining pesky weight over the holidays.
But don’t let that scare you off, because these are definitely tarts that you want to taste for yourself!
To make these flower shaped mini lemon curd tarts by Inspired Dreamer, you’ll need one unbaked pie crust, a jar of lemon curd, some powdered sugar, a mini muffin pan, and a flower shaped cookie cutter.
Preheat the oven to 425 degrees fahrenheit. Then, just unroll the pie crust and use your new flower shaped cookie cutters to make as many mini crusts as possible. If you don’t get twelve from the first round, just re-roll the scraps and do it again.

Spray each of your muffin tin depressions with a layer of cooking spray or coat it with canola oil. Then lay each flower into its own hole in your mini muffin tin, folding the petals inward, and gently pressing the dough into the bottom of the hole, before then pushing the outer petals against the sides of the tin.

Using a toothpick or a fork, prick the bottoms of each unbaked flower dough shell a couple of times. Bake these in the oven for about five to seven minutes, or until they are a light golden brown.

Watch the edges to make sure they don’t burn. Remove all the shells from the muffin tin and fill each flower with a few teaspoons of lemon curd.
