Angela Markus

French toast has evolved into an international breakfast staple. Whether you stick to the basics or top your toast with fruit and specialty syrups, it proves to be an easy way to please a hungry breakfast crowd. Here is a delicious twist from the kitchen of the Baker Mama.

To make French Toast Roll-Ups, you will need: 3 tablespoons unsalted butter, melted, 3 tablespoons granulated sugar, 2 tablespoons brown sugar, 1 tablespoon ground cinnamon, 2 large eggs, ¼ cup milk, 2 tablespoons granulated sugar, 2 teaspoons ground cinnamon, 8 slices soft white bread, crusts cut off, 3 tablespoons butter, for saute pan, and maple syrup, for serving.

First, in a small microwave-safe bowl, melt 3 tablespoons butter. Then using a fork, stir in 3 tablespoons granulated sugar, 2 tablespoons brown sugar and 1 tablespoon cinnamon until all the ingredients have blended. Set the spread aside.

Trim the crusts from each slice of bread, roll one slice out to about ⅛-inch thickness with a rolling pin. Spread the butter mixture on each rolled out slice and roll up tightly.

In a large saute pan, allow 3 tablespoons of butter melt over medium heat. Dip one roll at a time in the egg mixture and place into the pan. Allow the roll ups to cook for 1-2 minutes per side until golden brown and slightly crisp on the outside. Remove to a clean work surface and sprinkle each roll up generously with the cinnamon-sugar mixture.
