Thanks to the bloggers behind Thrifty Jinxy, we bring to you a surprisingly easy recipe for gloriously cheesy, gooey, and fried balls of literal Heaven.
Can you tell we’re a fan of these Fried Macaroni Cheese Bites?
While making fried foods at home may not always be your MO — and believe us, we totally get the whole wanting to eat healthy thing — you’ll have to make an exception for these delicious goodies. While your jeans may not thank you after you shove an entire batch into your mouth (yeah, it’s pretty much impossible to avoid doing this), your taste buds certainly will.
To get started, you’ll need the following:
1 lb Macaroni
1 8oz packages of shredded cheddar cheese
1 1/4 cup Milk
1/2 cup Flour
1/4 cup Butter
3 cup bread crumbs
Salt & Pepper to taste
Vegetable Oil (for frying)
The recipe itself is surprisingly simple and easy to follow. You’ll do the following:
Boil macaroni until tender. Then drain and set aside.
Melt butter over medium heat.
Make a roux by adding flour and mixing until light brown color
Add 1 cup milk and whisk
Add the shredded cheese, one handful at a time.
Mix until cheese is all melted
Add cooked macaroni to pan and mix until well coated.
Add salt and pepper.
Transfer to container that will fit in your refrigerator
Refrigerate for 1 hour or until cold.
Line a baking sheet with wax paper
Form cold macaroni and cheese into 1″ balls and place on prepared pan.
Place in freezer for 1 hour.
Beat eggs and add 1/4 cup milk in a bowl to make egg wash.
Dip balls into egg wash then roll in breadcrumbs to coat completely.
Heat oil in deep fryer to 320 degrees
Fry for about 3-4 minutes and drain.
