To make this delicious version of Mexican corn on the cob, begin by pre-heating an outdoor grill to medium-high heat.
While the grill is heating, shuck four ears of fresh summer corn. Grill the corn until it’s hot and lightly charred all over. This will take about seven to 10 minutes depending on the temperature of the grill. Keep turning the corn so it cooks evenly and keep an eye on it so it doesn’t burn. Remove the corn from the grill and place it in a shallow dish.
Brush the ears with a quarter cup of melted butter. Then, spread a quarter cup of mayonnaise all over the corn.
Lastly, sprinkle the ears with half a cup of grated Cotija cheese. Cotija cheese is a Mexican cheese that’s available in large supermarkets. It comes already grated and tastes delicious.
Serve Mexican corn on the cob with lime wedges if you like. Many All Recipes members suggested sprinkling the corn with good quality chili powder or Mexican spice blend to give it a little zest.
