Summer is by far my favorite season. I am all about the sun, sand and surf!
While summer is here I plan to make the most of it and these adorable palm tree cupcakes are the perfect way to do that!
These coconut cupcakes are topped with creamy cream cheese frosting, graham cracker sand and a palm tree almost too cute to eat … almost.
If you have barbecues, family reunions or graduation parties to go to this summer these cupcakes are the perfect treat to make!
For the cupcakes you’ll need:
1 3/4 cups of flour
2 teaspoons of baking powder
1/2 teaspoon of salt
3/4 cup of coconut milk
3 large egg whites
1 1/2 teaspoons of vanilla
1/2 cup of butter, room temperature
1 cup of coconut flakes, sweetened
Combine your dry ingredients and set aside. Mix together your coconut milk, egg whites and vanilla extract and set aside. Cream together your butter and sugar until light and fluffy. Begin alternating adding your try and wet ingredients until just combined and then fold in the coconut flakes.
Divide your batter equally into twelve cupcake liners and bake in a 350 degree oven for about 25-30 minutes.
For the top you’ll need:
1 package of cream cheese (8 ounces)
1/2 cup of butter, room temperature
2 teaspoons of vanilla extract
2 cups of powdered sugar
1/2 cup of crushed graham crackers
Pretzel rods
Green candy melts
Green sprinkles
In a bowl, cream together your cream cheese and butter until smooth. Add in your vanilla and powdered sugar and mix until combined.
Frost your cupcakes and sprinkle of your graham cracker sand.
The final touch will be the palm tree! Break your pretzel rods in half and set them on a wax paper lined baking sheet. Melt your green candy melts and transfer them to a zip lock bag with the tip cut off. Draw palm fronds over your pretzel rod and sprinkle with green sprinkles. Allow your palm trees to set in the fridge before adding them to the cupcakes.
