There are certain foods that just remind us of our childhood. Whenever I have rainbow sherbet ice cream it always reminds me of going to my grandma’s house!
One of our favorite YouTubers, the One Pot Chef, is bringing back one of his favorite retro treats! He says he hasn’t made this delicious dessert since his mother made it for him back in the 80s! Since this recipe is near and dear to his heart, he’s bringing it back and it’s better than ever.
In the video below, he shows us how to whip up this wonderfully simplistic Pineapple Upside Down Cake! For this recipe all you’ll need is: a can of pineapple rings, cherries, brown sugar, butter, eggs, self-rising flour, fine white sugar, milk and a little bit of vanilla extract.
He starts off by preheating his oven to 375 degrees. From there, he takes us through the simple process step-by-step.
You’ll need to find your 20 cm cake pan, line it with some parchment paper and lightly grease the sides to make sure that your soon to be wonderful creation doesn’t stick to the pan! Over the base of this pan, sprinkle about ½ a cup of brown sugar. Once you’ve done so, flatten it out and drizzle over five tablespoons of melted butter in order to create a nice caramel glaze.
Next, he lays out seven pineapple rings and places a cherry in the center of each. Then, he shows us how to make the cake batter using butter, sugar and vanilla extract. Sounds delicious, right? It gets better!
From there he adds in two eggs, self-rising flour and some milk. Put the cake batter over the pineapple slices and bake it for 55 minutes. Once the cake has cooled flip it over and voila! You’ve made yourself a beautiful and delicious pineapple upside down cake!
