Nothing says summer quite like corn on the cob. Sure, you can eat corn all-year long, but there’s something about eating it fresh off a grill when it’s season that makes my mouth water just thinking about it.
Given it’s such a summer time favorite there are dozens of different ways you can cook your corn.
How genius is that? This recipe is perfect for those busy work days when you don’t have much time to cook. Just toss some corn in the slow cooker and when you get home from work you’ll have a taste of backyard barbecue right in your kitchen!
For this simple recipe all you need is:
– 8-10 ears of corn
– 1/3 cup of water
– 1 tablespoon of lemon juice
– unsalted butter, to taste
– salt and pepper, to taste
– fresh herbs of your choice or green onions, for the flavor of your choice
Once you have all your ingredients all you have to do is put the corn in your slow cooker and pour in 1/3 cup of water. Cook on high for 2 1/2 to 3 hours — or until it’s bright in color and tender. Then using tongs (they’ll be hot hot hot) remove the corn and season with butter, salt, pepper, lemon, herbs, or any seasoning of your choice!
