This Slow Cooker Corn Jalapeño Dip Is What Dreams Are Made Of… YUM!

By now you are probably thinking we love cooking with slow cookers, and you are right, we do. The slow cooker can be a godsend if you use it right. It allows you to multitask while it does the cooking work for you. The flavor-infused dishes created in slow cookers some of the tastiest.

Here is another—Slow Cooker Corn Jalapeño Dip from DamnDelicious.com. Yes, that’s what I said and it is the best I ever had!

You will need 4 slices bacon, diced, 3 (15.25-ounces) cans whole kernel corn, drained, 2 jalapenos, seeded and diced, ½ cup sour cream, 1 cup shredded Pepper Jack cheese, ¼ cup grated Parmesan cheese, Kosher salt and freshly ground black pepper, to taste, 8 ounces cream cheese, cubed, and 2 tablespoons chopped chives.

First, you need to heat a large skillet over medium-high heat, add bacon and cook until brown and crispy (for about 6-8 minutes). After transfer to a paper towel-lined plate and set aside.

Next, place the corn, jalapeños, sour cream, Pepper Jack cheese and Parmesan into the slow cooker. Season with salt and pepper stirring until well combined. Then you top with cream cheese.

Cover the cooker and cook on low heat for 2 hours.

Uncover and stir until cream cheese is incorporated. Cover and cook again on high heat for an additional 15 minutes.

You can serve immediately with bacon and chives as garnished.
