Southwest Twice Baked Potatoes

Twice-baked potatoes are a great holiday meal. To be honest, they are great for any day and also super tasty and filling. Potatoes with cheese, bacon, green onions, and more cheese? How can that be wrong?

These Southern Twist Baked Potatoes are easy to make. Aside from the baking of the potatoes, these only take about 15 minutes of work.

You will need 4 russet potatoes, 2 tablespoons cream cheese, ¼ cup milk, ½ teaspoon cumin, 15 ounces black beans, 2 green onions, chopped, ¾ cup cheddar, 1 cup bacon, crumbled, salt and pepper.

Preheat the oven to 400° and line a baking sheet with parchment paper. Drizzle with olive oil and season with salt. Slice the potatoes in half lengthwise, and arrange on the baking sheet, flat side down. Coat with more olive oil and season with additional salt. Bake the potatoes for 30-40 minutes.

Next, hollow out the insides of baked potatoes and mash with the cream cheese, milk, cumin, and salt and pepper.

Stir in black beans, green onions, half of the cheddar cheese, and bacon crumbles.

Fill the hollowed potatoes with the mash mixture, top with the remaining cheddar, and bake for 15 minutes.
