St. Patricks Day is just around the corner and these sweet cupcakes are guaranteed to make the day extra special. She used a box cake mix for this project which makes it even easier to replicate!

Half of your cake mix gets dyed green and set aside while the other half gets dyed all the colors of the rainbow and turned into a beautiful rainbow cake. She uses a small round cookie cutter to cut the rainbow cake and places one circle in each cupcake tin.

When She pulled the cupcakes out of the oven they looked lumpy and weird, I thought she might have messed them up. After a layer of frosting and some cute gold coins these look good enough for a leprechaun! Your kids will be so surprised when they bite into one of these!
