Ultimate Snickers Cupcakes Are Enough To Break Our Diets- With Absolutely No Shame!

If you have ever wondered how to transform your favorite candy bar into cupcakes, here is your opportunity. Who can deny that chocolate, peanut, caramel combination of a Snickers bar?  Not me. That’s why I’m beyond ecstatic for this Ultimate Snickers Cupcakes recipe!

To make these mouthwatering cupcakes, you will need ½ cup unsweetened natural cocoa powder, ¾ cup all-purpose flour, ½ teaspoon baking soda, ¾ teaspoon baking powder, ¼ teaspoon salt, 2 large eggs, at room temperature, ½ cup granulated sugar, ½ cup packed light brown sugar, 1/3 cup vegetable oil or melted coconut oil, 2 teaspoons vanilla extract, and ½ cup buttermilk.

For the topping you will need 5 tablespoons unsalted butter, softened to room temperature, 1 cup creamy peanut butter, 1 cup confectioners’ sugar, 1/3 cup heavy cream, 1 teaspoon vanilla extract, ¼ teaspoon salt, ½ cup caramel sauce, and 5 to 6 fun size Snickers bars, chopped.

After you preheat the oven to 350°F, line a 12-cup, and a 6-cup muffin pan with cupcake liners. This recipe makes 14 cupcakes.

Next, in a large bowl, whisk cocoa powder, flour, baking soda, baking powder, and salt together until thoroughly combined. Set that aside and get a medium size bowl to whisk the eggs, sugar, brown sugar, oil, and vanilla together until completely smooth.

Then pour half of the wet ingredients into the dry ingredients and half of the buttermilk. Gently stir. Now pour in the rest of the wet ingredients and buttermilk. Mix until combined, but do not overmix. The batter will not be very thick.

Spoon the batter into the liners, filling to the halfway mark. Bake in batches for 18 to 19 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before frosting. For around 30 mini cupcakes, bake for about 10 minutes, same oven temperature.

To make the frosting, beat softened butter on medium speed for 1 minute until completely smooth and creamy. The add peanut butter and beat on medium-high speed until the two are combined. Add the confectioners’ sugar, cream, vanilla extract, and salt. Beat on low speed for about 20 seconds. After, gradually increase to high speed. Beat on high for 1 minute.

To put together the scrumptious dessert, frost the cooled cupcakes, and top with the caramel sauce and chopped Snickers.
