Half of the year has gone by, and if you did not follow through on your New Year’s resolution to eat healthier, don’t worry, it is never too late. Sometimes eating healthy can be easier said than done, especially if the food choices are not as appetizing.

But here’s a change! You’re going to love this healthy recipe! It provides a solution to eating food that is both good for you and tasty. These Zucchini Crisps are not only scrumptious, but a great snack to get the kids into eating healthy.

You will need 2-3 zucchinis, 1 tablespoon of olive oil, ¼ cup of grated parmesan cheese, ¼ cup of panko bread crumbs, 1 tablespoon of garlic powder, and 1 tablespoon of cayenne pepper.

For the dip, you will need a cup of mayonnaise, 1 teaspoon of grated garlic, salt and pepper to taste, and 1 teaspoon of sriracha.

Youtuber CookWithApril starts by showing us how to make the delicious dipping sauce to go along with the crisps. In a bowl, she mixes mayonnaise, garlic, salt, pepper, and sriracha. She refrigerates and prepares the zucchini.

She washes the zucchini and cuts them into little pieces. Then she drizzles olive oil over the zucchini and ensures each piece is well coated. In a separate bowl, she puts parmesan cheese, panko bread crumbs, garlic powder, cayenne pepper and mixes it up.

She coats each piece of zucchini in the cheese and crumb mixture then puts them into the oven, on a foiled baking sheet, for 15 to 20 minute at 375 degrees.

The results are divine! I can’t wait to try!
